Vegan Pomodoro Pasta Recipe!
Rigatoni pasta smothered with a dairy free marinara sauce and fresh vegetables!
Eating vegan can get a bad rap
And don't get me wrong, I get it. Some vegan foods can really be ~out there~ but there are some delicious alternatives!
And some pretty quick and easy ones too!
Today we have a speedy 40 minute pasta dish for you to try! No dairy or meat used!
Obviously, this can be made to be non-vegan as well!
So here's what you'll need:
Marinara Sauce:
1 TBSP extra-virgin olive oil
3 TBSP minced shallot
1 finely minced garlic clove
1/4 TSP salt and pepper
1 14 oz can chopped tomatoes
1 TSP balsamic vinegar
1/8 TSP cane sugar
Pinch of oregano and crushed red pepper flakes
"Cream" Base:
1/4 cup raw cashew (soak if needed)*
1/2 TBSP tomato paste
1/4 cup water
1/4 cup reserved pasta water
1/2 TSP salt
Pasta:
10 oz rigatoni noodles
EVOO to taste
2 medium zucchinis- sliced into half moons
2 TBSP fresh thyme leaves
2 14 oz cans cherry tomatoes, drained
6 cups spinach
1/4 cup chopped parsley or basil
salt and pepper to taste
Now let's get to cooking!
Starting with the marinara sauce: heat olive oil in a small pot over low heat. add shallot, garlic, salt and pepper and cook for 3 minutes, stirring often. add can of tomatoes (not drained), balsamic vinegar, cane sugar, oregano and red pepper flakes. cover and simmer on low for 20 minutes, stirring occasionally.
To make the sauce creamy: add marinara sauce to blender with cashews, tomato paste, salt and 1/4 cup of water. *(depending on your blender - lower powered ones- you will need to soak the cashews for 2+ hours to make the sauce creamier and drain before adding) blend until smooth.
Cook pasta according to instructions or until al dente.
While pasta in cooking, heat EVOO over medium heat in a non-stick skillet. add zucchini, thyme and salt and pepper. sauté for about 3 minutes or until slightly browned, stirring occasionally. reduce to low heat, add tomatoes and cook for another 2-3 minutes. toss in spinach and stir until wilted.
Before adding sauce to pasta, stir in 1/4 cup pasta water to loosen it up so it will coat the pasta.
Plate pasta and add sauce as desired along with the vegetables. top with parsley or basil and season to taste.
